Make your dinner as memorable as possible with this spicy coconut shrimp creation. This Asian-inspired spicy dish is beautifully composed using coconut oil as the base. Gather up your bowls and chopsticks and enjoy.
Ingredients
Serves 4
1 lb. large shrimp [16 oz. shell off & deveined]
1/8 cup of coconut oil
1 tablespoon of fresh ginger [finely chopped]
¼ teaspoon of red pepper flakes [crushed]
1 cup of red bell pepper [sliced]
1 tablespoon of garlic [sliced thinly]
1 tablespoon of soy sauce
¼ teaspoon of black pepper
¼ teaspoon of salt
Toppings
1/8 cup of cilantro [leafs]
1/8 cup of scallions [sliced thinly]
1/4 cup of unsweetened coconut flakes
Preparation
In a large sauté pan add in coconut oil and turn the heat to a medium-high. Once the oil gets mildly hot add fresh ginger, red pepper flakes and stir for about 2 minutes – this helps to infuse the oil. Add in sliced red bell pepper and thinly sliced garlic. Cook the vegetables for about 2-3 minutes and pour in soy sauce. Once that’s cooking, season shrimp with black pepper and salt. Add the seasoned shrimp into the pan and sauté for 5 minutes or until the shrimp is firm and pink. Once cooked place spicy coconut shrimp on platters and sprinkle the tops with cilantro leafs, thinly sliced scallion and sautéed coconut flakes.
Coconut Topping
Place the unsweetened coconut flakes in a small non-greased pan and sauté the flakes for a minute. The coconut flakes should be slightly browned and crisp.
Tips
Serve the spicy coconut shrimp on top of white rice, lettuce leafs or rice noodles.

– 1 teaspoon of coconut oil
– 2 ½ teaspoons of coarse sugar (white or brown)

Routine
Pour the sugar and the coconut oil onto a small bowl. Mix gently with a small mixing spoon, making sure not to crush the sugar granules. Once it becomes a paste, pour it in the mini container and store. You can use this scrub twice a day. Using your ring finger, place the sugar paste onto your lips and scrub each lip gently using circular motions to exfoliate. Wash the sugar scrub off and gently pat it with a cloth.
