These roasted sweet potato bites are perfect for adding sweet flavor to dishes. They can be a simple and nourishing replacement for croutons on salads and they are also ideal for snacking. So many variations – so little time!
2 medium sweet potatoes [peeled & cut into bite size cubed pieces]
1 tablespoon of olive oil
1 tablespoon of coconut sugar or brown sugar
1 teaspoon of cumin powder
1 teaspoon of cinnamon powder
Pinch of cayenne pepper
Salt [to liking]
Preheat the oven to 355 degrees. Coat a medium size-baking sheet with cooking spray. Peel and dice the sweet potatoes into bite size cubed pieces and place in the baking dish. Pour the olive oil, sugar, cumin, cinnamon, cayenne and salt. Toss to coat evenly. Bake in the oven for 55 minutes. Stir the sweet potatoes once or twice during roasting. Serve and enjoy!
